We actually can go all the way to 15% in North Carolina. No World Wide Stout or 120 Minute, but you are right, we have the golden age of selection going on right now.
I'm afraid, however, that we have more craft breweries that have entered the market than we can support. Penn Brewing, for example, which just arrived within the last six months, is rumored to be pulling out already.
Specialists
According to Wiktionary A specialist can be someone devoted to a field.
Therefore, it is not misleading to call oneself a specialist as there is no real qualifications for a specialist outside of the official designation in the military. It is not like saying you are the leading maker of dark beers - which would be misleading.
